Semola e Farina was founded in the heart of the capital's historic center, at Via dei Falegnami 69, just steps from the evocative Turtle Fountain in Piazza Mattei. The restaurant was born from the shared dream of two cousins who chose to bring their families' Abruzzo traditions, made up of authentic recipes, artisanal preparation, and carefully selected ingredients, to Rome. Every day, fresh pasta is made fresh in the center of Rome, offering a genuine product that showcases the quality of the ingredients and the pleasure of Italian cuisine.
Semola e Farina's philosophy is simple: to offer exclusively fresh pasta made with select flours and semolina, processed with a professional Pama pasta machine, and topped with locally sourced ingredients. The result is a pared-down cuisine, where each dish strikes a balance between tradition, simplicity, and a focus on quality.

Daily production is the heart of the business. At Semola e Farina, we exclusively prepare fresh pasta shapes, including spaghetti, mezze maniche, rigatoni, and fusilli, all made daily to ensure consistency and flavor.
The choice of raw materials plays a crucial role. For the dough, we use Molino Dalla Giovanna type 00 durum wheat flour and Mininni durum wheat semolina, carefully selected ingredients that create a pasta with the ideal consistency and the ability to enhance any sauce.
The sauces are prepared using quality ingredients. Homemade guanciale, artisanal pesto, Sabine extra virgin olive oil, Rosso Pomodoro peeled tomatoes, and fresh vegetables enhance recipes that are part of the Italian gastronomic tradition.
The focus on fresh ingredients and predominantly locally sourced condiments allows us to maintain high quality in every preparation, respecting the simplicity of the recipes without resorting to industrial processing.
